Instructions

  1. For the glaze
  2. Combine water and sugar in a large pan over a low heat, without boiling until the sugar dissolves. When the syrup thickens slightly add the oranges in batches gently. Let it simmer gently for about 10min uncovered until the rind is tender. Carefully remove the slices and reserve the syrup.
  3. Place the slices over base of prepared pan. Add some extra water to the syrup if you find it too little, and simmer till it turns light honey color. Pour enough syrup over the slices in pan.
  4. For the cake.
  5. Preheat the oven to 180 deg. cel. Grease a 8in pan.
  6. Sieve the flour and baking powder.
  7. Combine all ingredient in a mixer and beat with an electric mixer on low speed until combined. Continue mixing until the mixture is smooth and light in color.
  8. Pour mixture in pan and bake for 45 min and test with a skewer when it comes out clean.
  9. Cool the cake and gently revert cake on a wire rack. Prick the cake with a tooth pick all over and pour any left over syrup over the cake.
