Instructions

  1. Preheat oven 350 degrees:
  2. Place the garlic, parsley, tomatoes, olive oil and black pepper in the food processor and give a few good chops.
  3. Place the pork in a baking pan and top with the chopped veggies. Add the chicken broth to the pan with the bay leaves and roast in the oven. You may add more broth to the pan as the broth dries.
  4. Bake about 20 minutes per pound ~ about 1 hour.
