Instructions

  1. Fully submerge the pork belly in a pot of water, add the salt and bring to a boil. Reduce to a simmer and cook until the pork belly is flaky and tender, 3 to 4 hours. Turn off the heat and drain.
  2. Heat the vegetable oil in a fryer or large pot to 350 °F. Gently place spoonfuls of the boiled pork belly into the fryer until golden brown and crispy; about 5 to 7 minutes. Transfer to a paper towel lined plate or bowl to drain and immediately season with salt and pepper while still hot from the oil.
  3. Mix the mayonnaise, mustard and honey in a bowl. Adjust amounts to your tastes. Spread a portion onto the bottom baguette halves. Top with tomatoes and chopped lettuce and the fried pork belly. Drizzle with the habanero vinegar, to taste. Finish with another heavy drizzle of the honey mustard mayonnaise.
