Instructions

  1. Heat oven to 350 F. In a large bowl mix flour, salt, baking powder and baking soda, bran and spices together.
  2. In the bowl of a standing mixer with the paddle attachment, beat the butter, eggs, sugar substitute, orange juice and molasses until well combined. Slowly add the flour mixture until incorporated.
  3. Remove dough from bowl and roll out thinly on floured board.
  4. Using a cutter, cut into gingerbread men shapes (or other shapes) and place on buttered cookie sheets.
  5. Bake for 15-20 min or until crisp and lightly browned. Cool on a wire tray and store in an airtight container.
