Instructions

Preheat oven to 350. Hollow out bell peppers and place inside baking pan. Brown ground turkey in a skillet. Once browned, add drained black beans, drained corn, enchilada sauce, cheese and cumin and stir until evenly combined. Stuff each pepper to the top and cover pan loosely with tin foil. Bake for 1 hour. Remove foil and sprinkle tops with cheese and return to oven for an additional 5 minutes until cheese is melted.
