Instructions

1. Rinse the black beans very thoroughly to remove as much salt as possible. It might help to buy a low sodium variety of black beans. Pre-heat the oven to 350 degrees Fahrenheit.

2. Combine the black beans, maple syrup, milk, melted coconut oil, and eggs in a powerful blender and process until smooth and completely mixed.

3. In a large bowl, mix together the SWEETENED protein powder, cocoa powder, baking powder, and vanilla sugar. Add the wet mixture from the blender and stir to combine. You should now have a thick brownie batter.

4. Pour the brownie batter into a brownie pan lined with baking paper. Smooth until evenly distributed. Add cacao nibs to the top if desired.

5. Bake for 20-25 minutes. The brownies will be puffy but firm to the touch when done, and a toothpick inserted in the center will come out clean.

6. Let cool completely before cutting.

Note: if the brownies are a bit too dry, serve with a small scoop of ice cream. These are admittedly not as gooey and fudgey as normal brownies, but with these ingredients and those nutrition facts, who can really be surprised? They are still great for a protein boost and go well with a cup of coffee too.
