Instructions

  1. For the salad:
  2. Finely slice the red, and green cabbage.
  3. Remove ends and finely slice romaine lettuce.
  4. Trim ends of scallions (white and green side) and finely slice.
  5. Peel and grate carrots, or put into a mini food processor to finely chop.
  6. Peel clementines then remove pith from slices.
  7. Add all the ingredients into a large serving bowl.
  8. For the dressing:
  9. Add all the ingredients into a glass jar and shake until well blended, or whisk all the ingredients in a mixing bowl.
  10. Pour dressing over salad, toss to combine well.

Health Tips

  • Many people will tell you to remove the skin on your chicken to cut down on fat. This is true, but if you like the taste, leave it on! You're only gaining a little fat for a lot of flavor. The name "kosher salt" comes from the word "koshering", the process of making food suitable for consumption according to Jewish law. You can easily substitute table salt or sea salt in recipes where the salt is being dissolved, but if you're using it to coat meat, you might wish you had the kosher salt.
