Instructions

The main idea is to fry the outer part and bake the inner part of the potato so big chunks are key!
  1. Get the onion and garlic ready, this is peeled and chopped, the garlic into little tiny pieces, the onion into chunks about the size of your thumbnail.
  2. Heat the oil as hot as it gets, that just before it starts smoking.
  3. Meanwhile cut the potatoes into large chunks, so big that only one chunk fits in your mouth.
  4. But them in the how oil a few at a time, be careful... no splashing!
  5. Get an empty pan with lid warmed up with low heat
  6. once the potatoes are golden, they should still be bubbling. Bubbling is the steam leaving the potatoes, and if steam is leaving its hard for oil to get in.
  7. Put the potatoes in the low heat covered pan,
  8. Once all the potatoes are in the covered pan add the onions garlic and spices, no need for extra oil to saute the onions, the potatoes provide enough!
  9. leave at low heat until the potatoes are soft and the onions are translucent.
  10. enjoy!
