Instructions

Split the avocado in half, remove the pit and scoop pulp into a blender. Add cucumber pieces. Puree until smooth. Add coconut milk, lime juice, cumin, Tabasco, ginger and Chavrie, blend well. Season with salt and pepper. Chill well before serving.

To speed up the ripening process, put the avocados in a paper bag with an apple or banana. It really works!

  • The average fresh lime contains 2 tablespoons of lime juice (just in case you are substituting bottled lime juice).

  • Keeping ginger on hand all the time doesn't mean you have to buy bottled ginger. Instead, freeze fresh ginger whole and grate what you need while its still frozen.
