Instructions

Heat olive oil in large skillet on medium heat, add onions. Stir occasionally making sure onions are not cooking too fast, adjust heat as needed. About mid-way through cooking process add salt, pepper and butter. Continue to cook until onions are amber in color. Remove from stove top and drain excess oil. Combine remaining ingredients in a small bowl and stir until combined. Add drained onions, stir well and garnish with snipped chives. Serve with homemade potato chips or use as a dip for vegetables.
