Spoonacular is a recipe search engine that sources recipes from across the web. We do our best to find recipes suitable for many diets — whether vegetarian, vegan, gluten free, dairy free, etc. — but we cannot guarantee that a recipe's ingredients are safe for your diet. Always read ingredient lists from the original source (follow the link from the "Instructions" field) in case an ingredient has been incorrectly extracted from the original source or has been labeled incorrectly in any way. Moreover, it is important that you always read the labels on every product you buy to see if the product could cause an allergic reaction or if it conflicts with your personal or religious beliefs. If you are still not sure after reading the label, contact the manufacturer.

We also attempt to estimate the cost and calculate the nutritional information for the recipes found on our site. Again, we cannot guarantee the accuracy of this information. Quiche can be paired with Sparkling Wine, Champagne, and Bordeaux. Even if you aren't making mimosas, sparkling wine is great with eggs for two reasons. One, if you're eating eggs early in the day, sparkling wine has less alcohol. Secondly, it cleanses the palate, which is important since yolk is known to coat the palate. The Vietti Cascinetta Moscato d'Asti with a 4.7 out of 5 star rating seems like a good match. It costs about 18 dollars per bottle.

Vietti Cascinetta Moscato d'Asti

Pale sunshine yellow color and slight frizzante, this Moscato d'Asti has intense aromas of peaches, rose petals and ginger. On the palate it is delicately sweet and sparkling with modest acidity, good balance, good complexity and a finish of fresh apricots. Wonderful as an aperitif, perfect accompaniment to Pan-Asian cuisine and lobster as well as pastry, fruit based and creamy desserts and blue cheeses.

Instructions

Heat the oven to 400F. Dock the pie shell with a fork and bake for 10 to 15 minutes until lightly golden. In the meantime, heat the olive oil. Add the onions along with the garlic and chilli flakes and cook on high until the onion caramelise (about ten minutes). Now add the mushrooms and continue to cook on high so the mushrooms caramelise as well, about five minutes. Take off the fire, add the thyme and salt and pepper to taste. Beat the eggs in a large bowl with the cream and half the quantity of cheese. Add the onion-mushroom mixture and mix well. Place the pie shell on a cookie tray to catch any spillage. Pour the filling into the pie shell. Top the quiche with the remaining cheese. Drop the temperature to 375F and cook until the filling is set and golden. Serve when still warm from the oven.
