Instructions

  1. Directions: Preheat oven to 375 degrees. In a large saucepan over medium heat add potatoes in a single layer with 1 tbsp olive oil. Cook 5 minutes each side until just browned and opaque. Cook potatoes in batches if you have to. In the mean time crack the eggs into a large bowl and whisk together with a splash of water. Add in the carrots, celery, and salt. While the last batch of potatoes are baking thinly slice apples and onions. Add to pan with a tablespoon of olive oil after removing potatoes and cook until softened stirring occasionally.
