Zucchini, also known as courgettes, are a popular summer squash that come in a variety of shapes and sizes.

Choose zucchini that are firm with shiny, undamaged skin. You may also want to stick with small to medium-sized zucchini (big zucchini may taste bitter).1 Store zucchini in the refrigerator.

Zucchini are unfortunately on the "Dirty Dozen Plus" list, which means you might want to buy zucchini organic if you can.
