Rice is a staple grain in many cultures across the globe, especially in Asia. There are many types of rice, including long, medium, and short grain varieties. Popular types include white or brown rice (long, medium, or short grain), Basmati rice (white or brown, long grain), and Jasmine rice (white, long grain). Risotto is typically made from arborio, carnaroli, or vialone nano rice, while paella is traditionally made from bomba rice.1 Red rice and black rice are also available and can be a striking addition to your meals.

Wild rice, on the other hand, is actually not rice at all, but rather a grass seed that is typically sold in a blend with long-grain brown rice.2

What is the difference between brown rice and white rice? Brown rice still has the germ and the bran, which is polished away to make white rice. This is why many people consider brown rice to be healthier than white rice; it contains more minerals and fiber.3 However, all rice will raise your blood sugar and should be eaten in moderation, so watch your portion sizes.4 In fact, if it seems like it would work in the recipe, the best option would probably be so-called cauliflower rice made from cauliflower processed in a food processor.
