How to Cook Steak

Some people are afraid of making steak thinking it involves some kind of magic. Maybe it does, but following these simple rules should take some of the magic out of the process and onto your taste buds.

This short clip shows you most of what you need to know; we're sure Gordon Ramsay believes he knows the best way to cook steak!

  1. Take your meat out of the fridge about 45 minutes before cooking it, otherwise you will get a burnt crust with a too raw inside.
  2. Dry the meat thoroughly with paper towels. Excess moisture makes it difficult to get it crispy.
  3. Rub the steak in olive oil and season it with plenty of kosher salt and pepper. You really want to use enough because some of it will come off in the pan.
  4. Put oil in a smoking hot pan. Use canola oil or ghee as they have high smoking points and you need the pan to get really hot! Do not use olive oil.
  5. Put in the seasoned meat and turn it every minute to get an even heat distribution. Use tongs to flip the steak. Do not use a fork because that punctures the meat and make some delicious juices run out.
  6. Optional: While the steak is sizzling throw in some crushed garlic and a bunch of fresh thyme.
  7. Before the steak is almost done, lower the heat, put in some butter and swirl the steak in the butter. Use a spoon to cover the steak with the butter.
  8. Take out the steak after having it cooked for X minutes per side (Blue: 1 minute, Rare: 1.5 minutes, Medium: 2 minutes, Well Done: 3 minutes).
  9. Let the steak sit for 3 minutes to allow for juices to settle. Then serve and enjoy.
